Prep Time: 15 mins | Cook Time: 45 mins | Total Time: 1 hr
Servings: 6 | Yield: 1 casserole
Ingredients
- 3 large potatoes, peeled
- 2 tablespoons butter, room temperature
- ¼ cup warm milk
- 1 tablespoon olive oil
- 1 onion, chopped
- 1 pound ground turkey
- 1 large carrot, shredded
- 1 (4.5 ounce) can sliced mushrooms
- 1 tablespoon chopped fresh parsley
- ¼ teaspoon dried thyme
- 1 clove garlic, minced
- 1 teaspoon chicken bouillon powder
- 1 tablespoon all-purpose flour
- salt to taste
- Ground black pepper to taste
Instructions
- First, preheat your oven to 400°F (200°C). Meanwhile, place the potatoes in a pot and cover with water. Bring to a boil and cook until tender, about 15 minutes.
- While the potatoes are cooking, heat the olive oil in a skillet over medium heat. Add the onion and sauté until translucent, approximately 5 minutes.
- Next, add the ground turkey to the skillet. Cook and crumble until browned, around 5-7 minutes. After that, stir in the carrot, canned mushrooms, parsley, thyme, and garlic. Continue to sauté for 3 more minutes.
- Sprinkle the chicken bouillon powder and all-purpose flour over the mixture. Stir well to coat the ingredients. Season with salt and pepper to taste.
- Once the potatoes are done, mash them with the butter and milk until smooth. Season with more salt and pepper if needed.
- Spread the turkey mixture evenly in a baking dish. Then, layer the mashed potatoes on top, smoothing with a spatula.
- Bake in the preheated oven for about 25-30 minutes, until the top is slightly golden and bubbly.
- Allow the pie to cool for a few minutes before serving. Garnish with additional fresh parsley if desired.
Optional Healthier Cooking Method
For a lighter version, consider using sweet potatoes instead of regular potatoes for added vitamins and fiber. In addition, you can reduce the amount of butter by substituting with more olive oil for healthier fats.
