Ingredients
- onion, cut into chunks
- green bell pepper, cut into chunks
- fresh parsley
- fresh cilantro
- Culantro
- 3 cloves garlic
- 1 tablespoon water, or as needed
- 1 pound ground beef
- 1 (1.41 ounce) package sazon seasoning
- Ground black pepper to taste
- 1 pinch adobo seasoning, or to taste
- olive oil
- 8 ripe plantains, peeled and cut on the bias
- 4 eggs, beaten
- 2 (15 ounce) cans green beans, drained
Instructions
- Preheat your oven to 350°F (175°C).
- In a food processor, blend the onion, green bell pepper, fresh parsley, fresh cilantro, culantro, and garlic until finely chopped. Add water if necessary to blend smoothly.
- Heat a large skillet over medium heat with a little olive oil. Add the processed mixture. Cook for 2-3 minutes until fragrant.
- Add the ground beef and cook until browned. Stir in the sazon seasoning, black pepper, and adobo seasoning to taste. Once cooked, set aside.
- In a separate skillet, heat olive oil over medium heat. Fry the prepared plantains until golden brown.
- Layer half of the plantains into a greased baking dish. Spread half of the beef mixture over the plantains. Top with a layer of drained green beans, then add another layer of plantains, followed by the remaining beef mixture.
- “Pour the beaten eggs evenly over the top layer.”
- Bake in the preheated oven for about 20 minutes, or until the eggs are set.
Healthier Cooking Option (Optional)
- For a healthier twist, consider baking the plantains instead of frying. This reduces added oils while retaining the delicious texture. Simply preheat the oven to 400°F (200°C), coat the plantains in a little olive oil, and bake until golden, about 20 minutes, flipping halfway through.
